Pisco Sour

From: SushiSamba Rio, Chicago. Yield: 1 serving.

1 egg white
2 level bar spoons of sugar
2 oz. pisco brandy
1½ oz. lime juice
as needed, bitters

Mix all ingredients, except bitters. Shake vigorously with ice. Pour and top with a line of bitters. Serve in a rocks glass.
