A look at 7 restaurants that opened in Denver this spring

Bakeries, pizzerias, and brunch spots abound

Like the spring flowers, new eateries have been popping up all over the Denver metro area, bringing Colorado a fresh crop of hip bakeries, plant-themed cafés, pizza, and brunch spots. Most of the noteworthy openings are locally run, though Washington, D.C..’s popular Call Your Mother Deli has just branched out to the Mile High City, with plans to open more locations soon. The bakery Get Rights built anticipation for months, showcasing how to market a concept on social media to make people hungry well before they could actually eat there.

Denver-based chef Nick Kayser finally has his own restaurant, Rooted Craft Kitchen, and the team from Pony Up launched a second concept: Side Pony Coffee & Cocktails. No Denver food list would be complete without the ever-growing lineup of pizza places, with Quinto Neighborhood Pizzeria and Sofia's Roman Pizza coming on to the scene. Denver also loves its brunch, and now residents have chef Carrie Baird’s Fox and the Hen to look forward to. Overall, it's been a busy restaurant season for Denver, a scene that's always evolving and getting better and better.
