Sweet and Sour Shrimp Pizza

Yield: 4 12” pizzas.

13 oz. (about 1 qt.) frozen, batterfried pre-cooked popcorn shrimp
5 lbs. canned crushed pineapple in juice
4 unbaked thin pizza dough shells,
12” diameter
1/4 cup vegetable oil
as
needed, Honey Pineapple Sauce (recipe follows)
1 cup finely chopped green onion
1/2 cup chopped fresh cilantro
to
taste, crushed red pepper

HONEY-PINEAPPLE SAUCE:

cups tomato-based pizza sauce
1
cup honey
1
cup pineapple
1/4 cup distilled vinegar

Deep fry shrimp for 30 seconds at 350°F. Drain well; reserve. Drain crushed pineapple; reserve. Make sauce; reserve.

Per Pizza: Brush 1 pizza shell with 1 Tbsp. oil. Spread 1 cup Honey-Pineapple Sauce over pizza. Scatter 1 cup reserved popcorn shrimp over sauce. Bake at 500°F until crust is lightly browned, about 10 minutes. Sprinkle with 1/4 cup green onion and 2 Tbsp. cilantro. Cut pizza into 6 wedges. For Honey-Pineapple Sauce:

Thoroughly mix pizza sauce, oney and pineapple. Stir in 1/4 cup distilled vinegar.
