Mediterranean Potato Dip

Mediterranean Potato Dip

Yield: 48 servings, ⅓ cup each.

½ carton Nature's Own Potato Pearls® Premium Mashed Potatoes

2 Tbsp. salt

3¼ qt. boiling water

1½ qt. plain lowfat yogurt

1½ cups olive oil

1½ Tbsp. garlic, minced

2 tsp. fresh lemon juice

as needed for garnish, mint leaves

Combine dry potatoes and salt in large bowl. Whisk in boiling water. Let stand 5 to 7 minutes. Whisk potatoes smooth.

Beat in yogurt, olive oil, garlic and lemon juice. Hold dip warm for service. Garnish dip with mint leaves for serving, if desired.
