Pumpkin Bread Pudding

From: Judith Ebbinghaus, Santacafè, Santa Fe, NM. Yield: Half hotel pan.

8 cups cubed white bread
2 cups canned pumpkin
2 1/2 cups heavy cream
1 cup sugar
1 tsp. baking powder
5 whole eggs
1 tsp. vanilla
2 Tbsp. rum
pinch of salt
3/4 tsp. nutmeg
1/2 tsp. cinnamon
1 cup golden raisins, plumped
2 Tbsp. melted butter

Put cubed bread in a half hotel pan. Mix remaining ingredients well, and then gently pour over the bread.

Bake in a water bath at 350°F for 35-45 minutes.
