Brazilian Pork Stew

Yield: 12 servings.
3 lbs. pork stew meat
1/2 cup flour
1/2 cup oil
1 cup celery, chopped
1 cup carrots, chopped
1 cup onion, chopped
4 cups potatoes, chopped
2 Tbsp. garlic, chopped
1/2 cup tomato paste
3 Tbsp. Tabasco® brand Pepper
Sauce 3 qts. beef broth
to taste, salt and pepper
Heat oil in pan, add pork and cook until two-thirds done. Add flour and vegetables, cook until vegetables are tender. Add garlic and cook two minutes; add tomato paste, Tabasco? brand Pepper Sauce and broth. Reduce heat and bring to a simmer. Cook for 1 hour, add salt and pepper. Remove from heat, let stand 10 minutes. Refrigerate and hold for service, or place in warmer ready for service.
