Grilled Ham and Cheddar with Smoky Sweet Potato Mayonnaise

Yield: 8 servings.
2 lb. smoked ham
16 oz. Cheddar cheese
½ cup sweet potato, baked
½ cup mayonnaise
1 Tbsp. Tabasco® brand Chipotle Pepper Sauce
¼ tsp. salt
16 slices artisan rye bread, thick-sliced
4 oz. butter
Combine mashed sweet potato, mayonnaise, Tabasco® brand Chipotle Pepper Sauce and salt. Mix well.
Divide ham and Cheddar between bread slices and spread with 2 Tbsp. mayonnaise mixture. Brush bread with butter and grill until bread is toasted and cheese is melted.
