| Icelandic® Cod Loins or Tails, thawed Eggs, beaten Milk Fresh bread crumbs Parmesan & Romano Cheeses Pine nuts, chopped Basil, chopped Parsley, chopped Salt and pepper, to taste Angel Hair Pasta, prepared to box instructions Lemon & basil, to garnish |
- Preheat oven at 350°. Prepare Angel Hair Pasta as instructed on box.
- Beat eggs together in small bowl. Add milk and combine well. In large bowl, mix together bread crumbs, Parmesan and Romano cheeses, pine nuts, basil, parsley, salt and pepper.
- Dip each Cod Loin or Tail in egg mixture and then in the bread crumb/Parmesan mixture. Place on a sheet pan and bake 10 to 15 minutes if thawed. If preparing Cod from frozen, bake 20 to 25 minutes.
- Serve on seasoned Angel Hair Pasta topped with tomato sauce. Garnish with lemon and basil.
