From: Head chef and certified maestro pizzaiolo Fabrizio Cercatore, Hot Italian, Emeryville, CA. Yield: 1 pizza. as needed, pizza dough 5 oz. mozzarella cheese 2 oz. Gorgonzola cheese 3.8 oz. pears 1.5 oz. honey Start with stretched pizza dough, approximately 13”. Apply the mozzarella, Gorgonzola and pears evenly atop the dough.
