| Phil Costner COO La Madeleine Country French Cafe Phil has 30 plus years of experience in the Food & Beverage Industry and is a graduate of the Culinary Institute of America. In his current role as Chief Operating Officer for Dallas based la Madeleine Country French Café, he is responsible for Operations, Marketing, Menu/Product Development, Purchasing, Communications, Facility Development/Design and Training.
Prior to joining the la Madeleine leadership team, Phil was Vice President of Food & Beverage for Carlson Restaurants Worldwide where he was brought on board to reinvent the core menu for TGI Friday’s 600+ domestic restaurants. He developed and integrated menu implementations associated with major media each year, along with numerous product and process improvements.
Before joining Carlson, Phil had a highly successful career with Universal Studios Hollywood. During his tenure with the company, he had direct oversight of the planning and construction of 30+ themed food service facilities for Universal’s Islands of Adventure Theme Park in Orlando, FL—achieving record setting revenue levels within 45 days of grand opening.
He was an integral part of LSG Sky Chefs’ R&D Team—where he developed a multitude of products for several airlines and helped design and open a new production facility at New York’s JFK Airport. He had the privilege of serving as Executive Chef and/or Director of F &B at the exclusive Warwick Hotel in Seattle, WA, The Woodmark Hotel in Kirkland, WA and Riverplace Alexis Hotel in Portland, OR.
He has been an active Board Member for both the International Chefs Association and the 2010 MUFSO Advisory Board. He is a recipient of numerous culinary awards including a Menu Master’s Award in 2005. Phil is a true visionary with strong business and marketing acumen coupled with expert culinary knowledge.
