Jonathan Eismann is a 1984 Graduate of the Culinary Institute of America and was voted by peers as the most likely to succeed in his graduating class. Jonathan worked in Paris and Switzerland in 1983 where he was commis at some of Europe’s finest hotels and restaurants. He received his Official European Certificate of Commis in Paris in August of 1983 and the age of 22.

At the age of 26 Eismann became the Executive Chef of China Grill in Manhattan. When restaurateur Jeffrey Chodorow had only one restaurant and one Chef it was Jonathan. Chef Eismann discovered South Beach In the late 1980’s and in 1992 he moved from his hometown of New York City to South Beach.

In 1992 Eismann created Pacific Time which is the single restaurant credited with beginning restaurant culture in South Beach and in Miami and ignited what quickly became the internationally recognized South Beach Restaurant Scene. To the delight of international and local real estate developers, other restaurateurs and retailers Eismann and his iconic Pacific Time single handedly sparked the revitalization of Lincoln Road in 1993.

In 2007 The Pacific Time lease ended as the rent became prohibitive for Pacific Time to continue in its Lincoln Road location. Eismann sold the Lincoln Road Location for a sizeable sum and moved Pacific Time to the West End of The Miami Design District where he owned a number of buildings as investments going back as far as 2001.

In 2008 Eismann opened Pizza Volante. Pizza Volante has a wood burning pizza oven and a full menu of pasta, salads and Italian styled sandwiches and Panini. – Volante is Miami’s first Mozzarella Bar and in 2010 was awarded Best Pizza In Miami by The Miami New Times. Food and Wine Magazine remarked that Pizza Volante was one of the 25 most important venues to open in and positively effect burgeoning urban areas of the U.S. in 2009.

Continuing his expansion of eateries in The West End of The Design District Eismann created two more new concepts that share one building and one kitchen. Q-American Barbeque and FIN. This restaurant inside a restaurant concept is the first of it’s kind in Miami and one of first models of this type in the United States. These two venues opened in early 2010.

In June of 2010 Eismann closed Pacific Time permanently and retired his flagship marquee after nearly 18 years of service and having served more than 1 million diners.

Chef Eismann is a recipient of a James Beard Best Chef Nomination, he received the first has Robert Mondavi Award of Culinary excellence, he has appeared on TVFN and the Master Chefs series on Public Television and has received the highest rating available from almost every restaurant reviewer, critic and media in the nation. Eismanns restaurant company has been awarded The Diamond Palm Award and Certificates of Merit and Appreciation from The Mayor of The City Of Miami and The Mayor City of Miami Beach.

Chef Eismann has now created Jonathan Eismann Restaurants and continues to expand as a consultant to major Miami Hotel Groups and various restaurant related real estate ventures and restaurant design.

Eismann is a Private Pilot, races and restores vintage and contemporary Ferrari and Alfa Romeo with the National Autosports Association, enjoys boating and resides with his wife of 20 years and two children in South Beach, Florida.
