Plum Crazy Wild Rice Salad

INGREDIENTS: Salad
1 cup fresh red plums, diced
½ cup red pepper, diced
½ cup yellow pepper, diced
4 fresh tomatoes, diced
1 bunch green onions, sliced
¼ cup cilantro, chopped
¼ cup olives, sliced
2 cups Jasmine rice, cooked and chilled
2 cups wild rice, cooked and chilled

Dressing
½ cup picante sauce
½ cup plain yogurt
¼ cup sour cream
½ cup vegetable oil
½ tsp. salt
¼ tsp. pepperDIRECTIONS:1. Prepare plums and vegetables for salad. Toss with cooked and chilled rice.

2. Whisk dressing ingredients together in bowl. Toss with rice salad and chill before serving.
