INGREDIENTS:2 lbs. fully ripened fresh Florida tomatoes (about 4 large tomatoes) 1 jalapeno pepper, seeded, finely chopped (about 1 Tbsp.) 1 Tbsp. grated lime rind 3/4 tsp. salt ½ tsp. ground black pepper 2 Tbsp. tequila 2 Tbsp. lime juice 1 Tbsp. orange-flavored liqueur (optional) DIRECTIONS:Remove stem ends from tomatoes and finely chop.
