Fruit Parfait with Ginger-Marinated Grapes and Melon

Yield: 1 parfait.

  • 8 oz. honeyed yogurt
  • 2 oz. thawed mixed berries
  • 2 oz. Ginger-Marinated Grapes and
  • Melon (recipe follows)
  • 2 oz. granola

Ginger-Marinated Grapes and Melon (yields 4 quarts):

  • 1 large melon, peeled, seeded and
  • 1⁄2” diced
  • 2 qt. green grapes, cut in half
  • 1 oz. minced ginger
  • 1⁄2 cup apple juice
  • 1⁄4 cup simple syrup
  • 2 Tbsp. chopped mint

For Ginger-Marinated Grapes and Melon: Combine ingredients in small work bowl. Cover, label and refrigerate.

For parfait: Place 4 oz. (˝ cup) honeyed yogurt in a poco grande glass. Add 1⁄3 cup mixed berries. Add another 1⁄2 cup yogurt. Add 1⁄3 cup melon and grape mixture. Top with 2 oz. granola.
