Fruit Parfait with Ginger-Marinated Grapes and Melon
From: Edina Grill, Edina, MN.
Yield: 1 parfait.
- 8 oz. honeyed yogurt
- 2 oz. thawed mixed berries
- 2 oz. Ginger-Marinated Grapes and
- Melon (recipe follows)
- 2 oz. granola
Ginger-Marinated Grapes and Melon (yields 4 quarts):
- 1 large melon, peeled, seeded and
- 1⁄2” diced
- 2 qt. green grapes, cut in half
- 1 oz. minced ginger
- 1⁄2 cup apple juice
- 1⁄4 cup simple syrup
- 2 Tbsp. chopped mint
For Ginger-Marinated Grapes and Melon: Combine ingredients in small work bowl. Cover, label and refrigerate.
For parfait: Place 4 oz. (˝ cup) honeyed yogurt in a poco grande glass. Add 1⁄3 cup mixed berries. Add another 1⁄2 cup yogurt. Add 1⁄3 cup melon and grape mixture. Top with 2 oz. granola.
