Hot-N-Crabby Cakes

Yield: 12 servings.

2 lb. lump crabmeat, flaked
2 1/4 cups dried breadcrumbs
3/4 cup onion, minced
3 large eggs
3 Tbsp. Tabasco® brand Green
Pepper Sauce, divided
1 1/2 tsp. salt
6 Tbsp. butter or margarine
2 cups mayonnaise
3 Tbsp. sweet pickle, minced
for garnish, lemon wedges and lettuce leaves

In a large bowl, combine crabmeat, breadcrumbs, onion, eggs, 1 Tbsp. Tabasco® brand Green Pepper Sauce and salt. Stir to mix well. Shape mixture into 12 3" round patties.

In a large sautè pan, heat butter and sautè patties for 10 minutes, or until golden brown on both sides, turning once.

For jalapeño mayonnaise: Combine mayonnaise, pickle and 2 Tbsp. Tabasco® brand Green Pepper Sauce in medium bowl. Garnish each serving with a lemon wedge, lettuce leaf and a dollop of jalapeño mayonnaise.
