Carne Asada

Yield: 1 serving.
1 5-oz. carne asada steak
1 10” flour tortilla
1 oz. chipotle mayonnaise, prepared
2 oz. Sizzlin’ veggies 2 oz. cheddar cheese, shredded
2 oz. salsa, drained
6 oz. french fries
1 sprig fresh parsley
1 pickle spear
Place steak on hottest section of grill reserved for beef. Cook steak to a minimum of 155°F to medium-well doneness.
Place steak on probing platter, probe for doneness and spray with savory butter. Slice steak at an angle into 7 slices, creating shingles. Place tortilla on flat grill to heat up. Remove tortilla from grill with spatula. Place warm tortilla on cutting board surface and spread it with chipotle mayonnaise all around, to within 1” of edge. Shingle pieces of steak over mayonnaise, leaving approximately 1” border of tortilla. Spread veggie mix over steak, then top with cheese and drained salsa. Fold outside edges of tortilla towards center to where filling begins. Bend bottom of tortillas over center and begin rolling toward top. Once rolled, the wrap should hold as a neat bundle. Cut in half diagonally.
