Carnitas and Mango Pizza

Carnitas and Mango

Yield: 8 servings.

1 medium onion, sliced lengthwise in half, then sliced lengthwise into julienne strips

1 tsp. vegetable oil

8 oz. coarsely shredded cooked pork carnitas

3 Tbsp. butter, softened

½ tsp. chipotle powder

½ tsp. ground cumin

1 14"-16" pizza crust, partially cooked

2 Dole® Frozen Mango Halves, partially thawed, cut lengthwise into slices

1½ cups shredded manchego or queso blanco cheese

Cook onion in oil in large nonstick skillet until onion is just tender, stirring occasionally. Add carnitas; cook just to heat through. Combine butter, chipotle powder and cumin in small bowl. Brush butter mixture over crust. Top with carnitas mixture and mango slices; sprinkle with cheese.

Bake at 450°F for 12-15 minutes, or until crust is golden brown. Note: If using unbaked pizza dough, bake for 15-20 minutes.
