Bird, Brie and Apple

Yield: 1 serving.

4 oz. Brakebush Chik' N Zips® Moroccan Savory Spiced Breast Strips

1 pita, flat

2 tsp. honey mustard

1 oz. honey-cured ham, thinly sliced

¼ cup Wisconsin Brie cheese, thinly sliced

¼ cup roasted red pepper, julienned

¼ cup Granny Smith Apple, julienned

¼ cup Vidalia onion, julienned

⅓ cup fresh baby spinach

1 tsp. sugar

1 tsp. lemon juice

¼ tsp. canola oil

Heat chicken. Place pita flat on cutting board surface. Spread 1 tsp. honey mustard on pita and top with ham slice. Heat oil in pan and saute onion with sugar until brown (caramelized). Remove from heat. Add apple, roasted red peppers, spinach, lemon juice and 1 tsp. honey mustard and toss. Place sliced Brie atop ham and top with sliced chicken. Using slotted spoon, line up apple mixture atop chicken, being careful to avoid getting too much juice in the wrap. Roll pita away from you, keeping it tight. Press until warm on a flat grill top, and serve.
